How the estimated receipts are calculated

To expand on the basic stock consumption calculation, within retail stock takes we look at comparing the actual revenue and retail allowances against the estimated receipts. This is worked out by using the following calculation. As with the previous
calculations this can be done as a total value and also broken down by product.

​Estimated Receipts = Consumption x Unit of Measure x Retail Price

In the above calculation you will see reference to unit of measure. This is how you convert something you have counted into something that you can sell.

In a simple example, if you are counting a 70cl bottle of gin, to convert the bottle you take its total volume (700ml) and divide by the sales size (25ml). In this example the UOM would be 28. Sometimes your UOM might be 1, for example bottles of wine.

Generally, you can follow this calculation for all items that you sell however, post mix drinks must be calculated slightly differently as they are mixed with soda water at the point of dispense and have a specific mix ratio per product. In this case you would add the two ratio numbers together, multiply that number by how many milliliters of liquid the box currently holds then divide by your dispense size (in ml).
